Background

Co-founded in 2021 in Amsterdam by Kaho Onuki and Mitchell La Grouw Onuki, Sango is a micro roastery and coffee bar shaped by Japanese sustainability ideals and a producer first mindset. The philosophy centers on traceable single origin lots, close work with trusted importers and producers, and light to medium roasting on an IMF roaster to highlight sweetness, clarity, and place. The team pairs a small, education driven coffee bar with clear storytelling about origin and process, set inside a restored 17th century building in the city center.

Panel evaluation

Cups read clean and sweet with a gently drawn acidity. The range is largely single origin with classic washed and natural profiles at the core and occasional experiments for breadth, yet process rarely overwhelms variety or place. Sango Specialty Coffee on Stromarkt is a slender, three-level bar in a 17th-century canal house, where a compact ground-floor counter, tight spiral stair and view onto the roastery below create an intimate, vertical hideout in the middle of Amsterdam’s centre. At the bar, Sango’s own light-to-medium roasted single-origin coffees are brewed as espresso, batch brew and hand-poured filter, with competition-tested baristas guiding guests through a quietly serious but welcoming coffee menu that feels like a small oasis off the busy streets.
