Background

Founded in Copenhagen in 2016 by Jonas Gehl and Sebastian Quistorff, Prolog opened with a compact coffee bar in the Meatpacking District and grew into a roastery with several coffee bars across the city. The ethos is quiet and exacting: work directly with producers, keep the menu largely single origin, favor classic processing, and roast lightly so sweetness, clarity, and place lead. Their purpose is stated simply, “to add to the quality of life by giving people better coffee experiences,” and it guides everything from buying to brewing. Prolog’s influence shows in disciplined brewing culture and calm, guest focused service that turns small rooms into steady destinations for clean, origin driven cups.
