A sizable share of blends and a roast spectrum that often runs more developed than our Nordic baseline soften origin lines, and process heavy, experimental releases are frequent. When the focus shifts to very light roasted single origin lots, the cups are excellent, clean and sweet with articulate acidity and place easy to follow. Taken together with its scale and visibility, Onyx remains one of the most influential and widely recognised specialty roasteries.

Background

Founded in Northwest Arkansas in 2012 by Andrea and Jon Allen, Onyx helped make transparency and competition-level execution part of everyday coffee bar service in the U.S. The philosophy blends producer first sourcing with public price transparency and a roast approach aimed at sweetness, clarity, and polish. Their competition record is deep, including Andrea Allen’s U.S. Barista Championship win and multiple national and world podiums for the team, and the company is B Corp certified. A network of design-driven coffee bar in Bentonville, Fayetteville, Rogers, and Springdale carries the style into daily service.

Panel evaluation

Tastings show a split personality. When very light single origin lots lead, cups are excellent, clean and sweet with articulate acidity and place easy to follow. A sizable share of blends flattens definition, and many releases lean into experimental processing where process can outshine origin. Roasts are sometimes more developed than a Nordic baseline, adding heavier sweetness that blurs acidity and terroir lines. Packaging and product pages are rich with pricing and sourcing detail, but on the bag the producer often feels secondary to brand and concept, so the farmer story is not the first thing you see. Overall quality control is strong, yet the most compelling results are squarely on the light, single origin side
