Background

Founded in Amsterdam in 2016 by Lex Wenneker and Dylan Sedgwick, Friedhats grew from a small roastery into a city touchstone with a playful identity and a serious sourcing ethos. The founders bring a strong competition pedigree; Wenneker is a multi time Dutch champion and finished second at the 2018 World Barista Championship. Friedhats states its purpose plainly: to sell coffee that tastes great, consistently, and with transparency and honesty, and it treats sustainability as ongoing work rather than a slogan. In 2018 they opened FUKU, a neighborhood coffee bar that carries the roastery’s style into daily service.

Cups open sweet and vivid, then settle into clear lines with a well placed acidity; even the fruit forward, fermentation driven releases usually stay measured rather than loud. Jars can be sparse at a glance, which makes producer details easy to miss in the moment, but the website fills in the story with thorough farm, process, harvest, and lot information. Packaging is playful, service at FUKU is focused without fuss, and across seasons the range keeps a lively but controlled shape that rewards careful brewing.
