Dak
Known for headline experimental lots, DAK also produces outstanding clean processed coffees that anchor the style with clarity and poise. Light, precise roasting yields bright, sweet cups with place easy to read, while producer first communication and a polished Amsterdam coffee bar carry that intent straight to the guest. Beyond execution, DAK has helped present modern specialty coffee to a much wider audience, and the range holds its shape across seasons.
Background
Founded in 2019 in Amsterdam, DAK Coffee Roasters has grown from a small project into one of Europe’s talked-about light-roast roasteries. The focus is clarity and sweetness: mostly single-origin lots, high transparency, and a clean, light roast that shows variety and place. The menu leans on classic processing (washed, honey, natural) while regularly featuring some more experimental lots, always with cup cleanliness as the anchor.
DAK operates a compact coffee bar/tasting space in Amsterdam, used as a showcase for how they intend their coffees to be served. Service is straightforward and detail-oriented, with filter and espresso presented to highlight structure, sweetness, and aroma.

Panel evaluation
DAK roasts light and clean with a sweet core and clear structure. The lineup is largely single origin, with a classic backbone and a visible experimental streak that adds fruit forward intensity, though the process character can at times feel a little overwhelming and sit ahead of variety and place. Packaging is modern and generally informative, with producer, variety, and process presented plainly, though a few releases make the producer harder to spot or omit farm level detail, which softens traceability. Across seasons performance is reliable, with minor variance tied to the more experimental lots, and the overall impression is a confident and polished expression of contemporary Amsterdam roasting.

Set on Bellamyplein in Amsterdam’s Oud-West, just behind De Hallen, DAK’s showroom feels more like a finely tuned studio than a conventional café. The room is sleek yet warm, a carefully lit stage for an array of high-spec equipment and an unusually broad selection of beans to taste and take home. Here, tastings, retail and to-go drinks come together in a space that showcases DAK’s fruit-forward, experimental roasting style with the same precision and polish that defines its design.
